Choose a firm apple and cook off the liquid before filling. This gives a crisp roll with a soft apple centre.

Melt 20 g butter in a frying pan. Add the apples, sugar and cinnamon and cook over medium heat for about 8 minutes until softened and any released liquid has evaporated. Stir in the walnuts and cool for 10 minutes.

Heat a conventional oven to 190 °C. Melt the remaining 30 g butter. Prepare the 6 pastry rectangles and keep them covered with a clean cloth.
Lightly brush each rectangle with butter. Divide the filling into 6 portions and place one near the short edge of each piece. Leave a 2 cm border, fold the sides inward and roll up. Dampen the final edge with a little water and press to seal.
Place seam side down on a lined baking tray. Brush with the remaining butter and bake for 20 to 25 minutes until golden and crisp.
Cool for 10 minutes before serving, as the apple filling is very hot. Serve one roll per person, ideally still slightly warm.
