Potato and onion börek
Let the potatoes steam dry and cool the filling before assembly. A wet or hot filling makes the pastry less crisp.

Makes 12 rolls. Avoid overfilling and seal the ends well to keep the cheese inside during baking.

Heat a conventional oven to 190 °C. Crumble the feta and mix with the parsley. Divide into 12 equal portions. Keep the pastry covered as you work.
Lightly brush one pastry rectangle with butter. Place one portion of filling in a narrow line near the short edge, leaving a 2 cm border. Fold the sides over the filling and roll up firmly without stretching the pastry.

Dampen the final edge with a little water and press to seal. Repeat for the remaining 11 rolls. Place seam side down on a lined baking tray and brush with the remaining butter.
Bake for 20 to 25 minutes until golden and hot in the middle. Serve warm, allowing 3 rolls per person as a side dish.
